

I don't know about you but we've got a bumper crop of eggplants! I have added them to everything! I found this recipe online but tweaked it a little. Very Good!
These tasty eggplant patties are wonderful as a side dish along with sliced tomatoes or a little fresh salsa. Feel free to use a Creole seasoning blend instead of the hot pepper sauce.

Serves 6.

Ingredients:
- 2cups cooked eggplant, diced & cooked until tender
- 2 cups cooked brown rice
- 4 eggs
- 1 cup whole wheat flour
- 1/2 teaspoon salt
- pinch black pepper
- dash red pepper sauce
- 1/2 grated onion
- 1/2 cup minced herbs, your choice
- 1 1/2 cups sharp or mild Cheddar cheese, shredded
Preparation:
Drain and measure 2 cups of the cooked eggplant into a bowl. Mix with remaining ingredients. Cover and chill thoroughly. Heat bacon drippings or olive oil in a heavy skillet over medium heat; drop mixture by patties and fry until nicely browned on both sides. Serve immediately as a side dish with sliced tomatoes or salsa.Serves 6.
