Horseradish

I am ready to harvest my horseradish!

beautiful horseradish! What do you do with it when you harvest it? Can it be frozen? Looks like a lot planted there.

I thought that we were getting a frost the other night but it didn't happen. I usually wait to harvest after at least one frost or two. Then it can be harvested as needed ( until the ground freezes) or all at once. Horseradish keeps well in a 50/50 mix of vinegar. I will post our steps to preparing the root when we are ready. It can be frozen, but will loose a bit of it's bite. Some roots will need to be saved to replant. More to come later
