Roasted Beets Straight From The Garden!

Coated with olive oil, salt and pepper
and roasted in the oven at 350 degrees until fork pierces
and skin slides off.

All skin is removed and beets are ready to be sliced.
Reserve olive oil to be added to beets.

Beets with reserved oil, blue cheese, onions, a splash of balsamic vinegar, salt and pepper.
These beets were amazing! They were the best that we have ever had. So fresh and the blue cheese added just the right flavor!
